Nic's Special Mashed Potatoes


My son-in-law Nic makes the best mashed potatoes EVER!  Nothing more needs to be said...I bought all organic ingredients, easy to find.

Serves 12

Ingredients
5 lb Red Potatoes, skins on
½ stick butter
1 8 oz pkg cream cheese
Milk (to desired consistency)
Salt
Pepper

Directions
Cut potatoes in quarters, boil until tender (up to 30 minutes).  Mash potatoes.  Add butter, cream cheese, salt and pepper to taste.  Add milk and mash to desired consistency.  Serve hot.
