Alyssa's Zesty Carrots
Although I am calling this "Alyssa's Zesty Carrots" my mom originally served this dish. We all love it, Alyssa made it her own, and brings it to just about every meal. It is always a hit, perfect for every season, delicious, and easy to make! 5 stars for this one.
Serves 12
Ingredients
2 lb baby carrots
½ c mayonnaise (olive oil reduced fat)
1-2 T Onion
2 T Horseradish
1 T Butter
½ c Bread crumbs
Paprika if desired
Directions
Preheat oven to 350 degrees.
Boil carrots until tender, (15-20 minutes). Reserve ½ c liquid. Place carrots in a 2 quart baking dish or
casserole. Mix mayonnaise with
horseradish, chopped onion, and ¼- ½ c of liquid to desired consistency. Pour mixture over carrots and stir. Sprinkle with bread crumbs. Dot with butter and sprinkle with paprika if
desired. Bake for 30-40 minutes until
brown and bubbly.
